Dal Khichdi

Method. Heat ghee in a pressure cooker. Add cloves, cinnamon, asafoetida, ginger, chilkewali moong dal, dhuli moong dal, and rice and mix well. Sauté for 2-3 minutes. Add French beans, cubed carrot, green peas, salt, turmeric powder, grated carrot and 5 cups water and mix. Break green chilli and add.

Masaledar Gobhi

Grind onions, garlic, ginger, red chillies, cloves, green cardamoms, turmeric powder, cumin powder to a fine paste. Mix the ground masala with yogurt. Add salt and marinate the cauliflower florets in this for half an hour. Heat oil in a kadai, add mustard seeds and when they crackle add green chillies and sauté for half a minute.

Green Chutney

Grind together coriander leaves, mint leaves and green chillies to a smooth paste using a little water if required. Add black salt and sugar and blend once again. Transfer the chutney into a bowl and mix in the lemon juice. Coriander and mint chutney - an all time favourite.Green Chutney is an indispensable part of the Indian snack repertoire.

Methi Parantha

Method. Sift wholewheat flour along with gram flour, salt and red chilli powder into a bowl. Peel and mash the banana. Add the fenugreek leaves, ghee and yogurt to the flours and mix well. Add the banana, two tablespoons of oil and knead into a stiff dough. Keep it covered with a damp cloth for about twenty minutes.
